From Passion to Possibility: Sophie Lambert’s Microbakery Journey

When LDE London launched its Microbakery Bursary with The School of Artisan Food, the ambition was simple: to remove financial barriers to specialist training and give a woman with a passion for baking the opportunity to develop the skills, knowledge and confidence to take her next step.

In September 2026, Sophie Lambert did exactly that.

Sophie was awarded a full LDE London bursary covering 100% of the course fees and accommodation for The School of Artisan Food’s Microbakery Course in Welbeck, Nottinghamshire. The bursary was designed to widen access to high-quality vocational training for women pursuing careers in food, with particular consideration given to financial need and the potential to use new skills to benefit the wider community.

Learning the craft - and the business

Sophie arrived with a passion for baking and a particular interest in traditional methods. What followed was an intensive opportunity not only to improve her technical skills, but to explore what it really takes to develop a distinctive and sustainable microbakery.

Working in a professional bakery environment gave Sophie first-hand experience of commercial equipment, ovens, mixers and storage systems. She learned how to take base recipes and adapt them to create a wider range of products - opening up possibilities for new flavours, new ideas and, ultimately, new customers. Traditional techniques were a particular highlight, with bagel shaping becoming a firm favourite.

But the learning went beyond the bakehouse. One of Sophie’s most important takeaways was the need for a business to have a clear individual ethos: understanding what makes it different and allowing those values to inform its products and direction. The course helped her further define her own vision while generating ideas for future product development.


Confidence to take the next step

Perhaps just as important as the new technical knowledge was the change in Sophie’s confidence. Meeting a new group of people and tutors initially felt daunting, but she quickly found herself in a welcoming and supportive environment. The practical sessions, teamwork and encouragement she received helped Sophie grow in confidence in her own abilities - and leave the course energised about what might come next.

Baking with purpose

And Sophie’s ambitions extend beyond building her own business. She now plans to continue developing new products and experimenting with innovative flavour combinations while growing her microbakery. Importantly, she also hopes to work with a local food bank café, supplying baked goods and using her developing business to contribute to the community around her.

It is exactly the combination of enterprise, food skills and community impact that the LDE London bursary was created to encourage.

The School of Artisan Food reports that the bursary has increased Sophie’s technical skills, business readiness and confidence to grow her microbakery, leaving her better equipped to build a sustainable artisan food business while continuing to contribute to community-led initiatives.

And crucially, without the financial support she received, this opportunity would not have been accessible to Sophie.

Creating opportunities for women in food
