Daddy Howell’s Welsh cakes

Ingredients

8oz self raising flour

Pinch of salt

½ level teaspoon of mixed spice

4oz butter

2oz caster sugar

3-4 oz of currants, washed and dried

1 medium egg, beaten

Method

  1. Sift flour, salt and mixed spice into bowl

  2. Rub in butter until mixture resembles fine breadcrumbs

  3. Stir in sugar and currants

  4. Mix to stiff paste with beaten egg 

  5. Turn out onto floured board and knead lightly until smooth

  6. Roll out into ¼ “ thickness

  7. Cut into approx.. 18-20 rounds with a 2 ½ “ plain biscuit cutter 

  8. Cook on a well-greased heated griddle, thick frying plan or hot plate, allowing 1 ½ - 2 minutes per side

  9. Serve sprinkled with caster sugar

  10. Enjoy with a cuppa!
